Recipe | Slow Cooker Veggie Chilli


So Tuesdays are always super busy for me, up early for a workout, working all day and horse riding in the evening. Often this means that I don't get home until past 7pm, so on nights like these slow cooker (or crock pot) recipes are ideal! A hot, tasty, nutritious meal ready for you when you get home is perfect. That way you are not tempted to throw a ready meal in the microwave or get takeaway.

Using a slow cooker is a healthy way to prepare a hot meal and super easy too! There's nothing better than coming home to a kitchen smelling of wholesome food and a healthy meal ready to serve up. This recipe can be prepped in the morning (or the night before) and left to cook while you are out at work, at the gym and dealing with more the important things in life. The best thing about this recipe is that there will be plenty of leftovers which can be reheated or a quick meal the next day or taken to work for a healthy lunch!

Ingredients ~
  • 2 tbs Olive Oil
  • 2 Cloves of Garlic, chopped
  • 1 Onion, diced
  • 1 Tin of Pinto Beans
  • 1 Tin of Black Beans
  • 1 Tin of Sweetcorn
  • 1 Tin of Red Kidney Beans
  • 1 Tin of Chopped Tomatoes
  • 2 Chillies, chopped
  • 1 tbs Cumin
  • 1 tbs Cinnamon
  • 2 cups of Vegetable Stock
  • Chilli Powder & Cayenne Pepper to taste ~ I like it spicy!

Method ~
Sauté garlic and onions. Add to slow cooker along with the rest of the ingredients. Stir and cook on low or medium (depending on your slow cooker) for 6 hours or so.

Easy! Done and serve :)
