Happy Friday Ladies! I am glad it is Friday and I am looking forward to the weekend. We have a few birthdays to celebrate so I am meeting up with some friends for dinner on Saturday night, of course I leave it until the last moment to decide what to wear! As we are popping to the Mall tomorrow I think I might just have to treat myself to some new Topshop Leigh Jeans ;) Anyway! Today I thought that I would share with you a new recipe that I tried out last weekend. You'll have to excuse the picture quality as it is what I put on Instagram!
These muffins are super easy to make and are a great choice for breakfast or a snack on the go. You could even freeze half of the batch so you can enjoy them for longer!
Ingredients
- 150g wholemeal spelt flour
- 1 & 1/2 tsp baking powder
- 50g caster sugar (you could sub in Stevia)
- 100ml milk (whichever you like best!)
- 1 egg
- 40g coconut oil (or low fat spread) melted
- 1 medium apple, cored & chopped
- 1 banana mashed
Method
Preheat oven to 200 degree C/ fan 180/ gas mark 6. Sift the flour and the baking powder into a mixing bowl, then stir in the sugar. Put the milk, egg and melted coconut oil into a jag and beat together. Add to the dry ingredients with the apple and mashed banana. Stir until just combined ~ do not over mix. Spoon the mixture into a muffin tin and bake for 20-25 minutes, until the muffins are risen and golden. Cool & enjoy!

Ohh, these are getting made this weekend! I love banana bread, but I'm also a huge fan of wholemeal muffins, so these will definitely be my cup of tea...and probably taste pretty good with one too :)

Tesco - It's a Groovy Foods one about £7 a jar ~ Eeek! You only need a little bit in the recipes I use so it lasts a while.
